This is toshikoshi-soba (buckwheat noodles) I made for the new year's eve dinner this year. My favourite way to serve soba is to prepare it with toppings. My favourite toppings are tamago-yaki (or egg omelette), green onion, dried shrimp (lightly pan fried), tenkasu (deep fried flour-batter bits), aburaage (deep fried tofu), grated yama-imo (Japanese mountain yam), fine-cut nori (seaweed) or anything you like. What are your favourite toppings?
