「野菜週間」第2日目は、野菜たっぷりのちゃんちゃん焼きです。いいですね。おいしいですね。ホットプレートからあふれんばかりの量の野菜が、簡単に食べられるのがうれしいです。2日目に入って、野菜の量が一気に増えたようです。これからも楽しく野菜を食べていきましょう。ちゃんちゃん焼きのレシピは、『オレンジnet』から。
Salmon Chan Chan Yaki is a popular regional cuisine from Hokkaido (northern island of Japan). This is my absolute favourite way to eat a mountain of vegetables. You can put any veggies you like and serve it with rice. Super delicious! I used a Japanese electric griddle to make this. The griddle is very versatile. I often use it to make pancakes and okonomiyaki. This recipe is from "Orange net."

Instructions:
- Chop vegetables to your liking.
- Mix all the ingredients of the Miso mixture in a small pot and heat it for a minute to make a smooth paste. Set it aside to cool.
- Heat vegetable oil in the griddle at 150℃ (300F). Place salmon at the centre, skin side down. Put onions, carrots, and the hard parts of the cabbage in. Cook for 5 min.
- Flip the salmon and put the rest of the vegetables on the griddle. Drop a spoon full of miso mixture around the vegetables evenly. Put the lid on and cook for 8 more minutes until all the vegetables become tender. Once it is cooked, use a spatula to mix so that all the vegetables and salmon get coated with miso mixture. Serve immediately with rice.
